Second times are great too!

I think I’m getting addicted to making my own granola!

For this second recipe, I decided to make a good use of the ingredients I already have, as well as adding some new items. I like to cook organically, being creative and using all my senses to create recipes with a personal touch. Call it holistic cooking if you will. My choices of cereals, seeds, nuts, and spices are based on my personal taste. I wanted it to be hearty and comfortable, like grandma hugs.

So I encourage you to put your creativity to work, try to remember smells from your childhood that bring you good memories. Think about your favorite foods and the spices they contain. Does cinnamon make you happy? Is vanilla the best smell ever? Toasted almonds? Coconut? Coffee beans? The sense of smell is very powerful and it can connect you to ancient times of your life, your most primitive feelings. Why not?

And here goes the recipe:

Hearty granola

Ingredients

2/3 cup steel cut oats

2/3 cup puffed quinoa

1/3 cup raw quinoa

1/3 cup hemp hearts

1/3 cup sunflower seeds

1/3 cup brown sugar

1 cup (100g) sliced almonds

1 cup (100g) walnuts pieces

1 tsp kosher salt

½ tsp cinnamon

½ tsp nutmeg

½ tsp powder ginger

1/3 cup maple syrup

1/3 cup honey

1/3 cup flax seed oil

1 cup dried cranberries

Preheat the oven to 300º F (150º C). In a large bowl mix all the dry ingredients, except the cranberries, with the spices. Add liquids and stir it very well. Lay the mixture on a baking tray covered with parchment paper and bake for 20 minutes. Stir it well and bake it for other 20 minutes. Stir it once more and bake for 15 more minutes. If you like your granola to be more golden brown you can leave it a little longer. Let it rest for 1 hour then transfer it to a container with lid breaking it in the process. Add the cranberries, mix it well and enjoy!

Substitutions

In this recipe, you can substitute almost anything. As long as you substitute cereal for cereal, nut for nut, seed for seed, etc., you can just follow the quantities and have fun!
