The ultimate meatball

Who doesn’t love meatballs? Or veggie balls for the veggie lovers! The most important thing is that ball shaped food is awesome!!!
Today I’m presenting you this that I consider the ultimate recipe: cheese-stuffed-bacon-wrapped-meatball!!! OMG! Seriously? Is this really happening? Yes, it is! And even if you never cooked anything other than instant noodles in your life, you can make these! It’s that simple.

This dish is great for a dinner or game-day-food. Serve it with pasta, salad, roasted vegetables or chipotle mayo for dipping and have fun!
Ultimate Meatballs
Difficulty: Easy
Time - Hands on: 20 minutes
Total time: 50 minutes
Ingredients:
500g ground beef
500g ground pork
1 egg
½ cup breadcrumbs
1 tsp kosher salt
½ tsp ground black pepper
½ tsp chili flakes
½ tsp dried thyme
1 tsp chopped garlic
½ tsp onion powder
12 cheese cubes (2cm x 2cm x 2cm) – I like to use Monterey Jack, Havarti, Provolone, or White Cheddar. Pick your favorite cheese! ;-)
12 slices of bacon
What to do?
Pre-heat oven to 350F.
Mix all the ingredients except the cheese and the bacon in a large bowl with your bare hands. Yes, you may use disposable gloves. The mixture should be malleable but not too moist. Add more breadcrumbs if necessary.
Divide the meat into 12 portions. Using your hands, mold each part like a patty the size of your palm. Put a cheese cube in the center and lift the sides to make a ball. Use your fingers to close the top and make it look even.

Open a bacon slice on a cutting board. With a small pointy knife, make a small cut, just long enough so you can pass the other side of the bacon slice through it, like threading a needle.
Put a meatball on the bacon slice, lift the bacon extremities and close it on the top of the meatball, making a little bacon bow. Make this for all the 12 meatballs.
Place the meatballs on a greased baking tray and put in the oven for 25 minutes on the middle rack. Move the tray to the top rack, change the oven to broil, and raise the temperature to 400F for 5 minutes.
Take the tray out of the oven and let meatballs rest for 5 minutes before serving.
The last 5 minutes are to make the bacon crispy. Adjust this time according to your taste in case you like it more or less crispy.
